Stef's Black Bean Burgers

Total time: about 30 minutes

I probably am breaking some rule by posting this here, but this original recipe was developed by one of my good friends and won her a new kitchen in a national cooking contest. I usually don't like vegetarian foods but this is really amazing and so easy to make.

1 egg
2 tsp cornstarch
1 can (15 oz.) black beans, drained, rinsed
1 cup plain bread crumbs
1 cup (4 oz.) finely shredded cheddar cheese
1 cup salsa (I like the Newman's Own medium)
1/2 cup chopped green onions (spring onions)
1 garlic clove, minced (or 1T from a jar)
1/2 tsp salt
1/2 tsp cumin
1 tsp fresh lemon juice
1/3 cup olive oil for frying

1. In large bowl, combine egg and cornstarch; beat with wire whisk until smooth. Add remaining ingredients and mix well. Shape into patties (five 3.5" for burger shape, or smaller for bite size); refrigerate patties to firm up for cooking.

2. Heat oil in large skillet over medium heat until hot. Add patties; cook 14 to 16 minutes or until deep golden brown and centers are hot, turning once. The second side cooks faster than the first.

I prefer to make small burgers or burger bites and eat them as appetizers, but you could put them in buns and top with salsa.
You can also make a batch of these and cook them as you want them over a couple of days.
