Cheesy Chicken Salad - original recipe by Barry L. Kramer (last modified

Preparation time: about 10 minutes
Very easy. Seems weird, but it's really good.
Ingredients
· 12.5 oz. can cooked chicken breast packed in water
· 1 1/4 C finely shredded sharp cheddar cheese
· 1 1/2 t to 1T dijon mustard or spicy brown mustard
· 5 T mayonnaise
· celery and sweet onion - very finely chopped, vary to your taste, I
use 3T onion and 5T celery
Directions
Mix dry ingredients (cheese, celery, onion).
Drain the chicken. Shred chicken in bowl with fingers or a fork, mix dry ingredients again, then add mustard and mayonnaise and combine everything until homogeneous.
Great on crackers or as a sandwich.
When Logan was very very young, he called this "sushi". I have no
idea why, but he always loved it.
