Cucumber and Feta Salad - original recipe by Barry L. Kramer (last modified 21 May 2013; originally: unknown)
Preparation time: about 22 minutes and two days.

Very easy, tasty mixture of cucumber, feta, and sweet onion.

Ingredients
· 4 large cucumbers
· about 1 pound of feta cheese
· half of a medium-sized sweet onion, like a candy onion or a Vidalia
· 1/3 C white balsamic vinegar
· 1/3 C olive oil
· spices: about 1 teaspoon each of dried oregano and basil flakes rubbed to fine, and a sprinkle of powdered rosemary, thyme, and black pepper to taste


Directions
1. Rinse, then immerse the block of feta in fresh, cold water and refrigerate overnight. This prevents it from being too salty.

2. Finely chop or mince the sweet onion.

3. Put oil, vinegar, and spices into a 2.5 quart glass bowl. Add onion; mix.

4. Peel cucumbers; quarter them lengthwise and remove/discard seeds. Cut them into chunks.

5. Add cucumber chunks into oil/vinegar/spice dressing, and mix thoroughly.

6. Cube feta into small chunks and add to cucumber/onion/dressing mixture, turn lightly to combine, taking care not to damage the feta. Refrigerate a few hours to overnight, mixing a few times to distribute dressing.
