Flourless Sausage and Egg Muffins - original recipe by Barry L. Kramer (last modified 24 February 2013; originally: 06 January 2013)

Very easy, convenient tasty muffin-shaped cheesy breakfast thingys. They're not really muffins since they're not a pastry, but they do look like muffins.

Makes approximately 9 muffins that freeze and reheat well.

Ingredients
· 6 eggs
· 2 t corn starch
· 2 T chunky salsa (hot or medium) - I used Newmans Own Medium
· half of a package of ground breakfast sausage - I used Bob Evans Zesty Hot
· 1 to 1.5 C finely shredded sharp cheddar cheese

Easily doubled if desired.
If doubling recipe, use a dozen medium eggs and 2.5C cheese; fill 16 to 19 muffin cups to the top, and bake approximately 22 minutes in a convection oven, rotating the tray once. They will be sizzling and begin to brown like the photo when done perfectly.
Cool 6 minutes and the larger muffins will fall out of the cups on their own.


Directions
1. Cook sausage, broken up into small pieces, in frying pan until done. Drain fat and cool.

2. Preheat oven to 350 degrees.

3. Crack eggs into bowl, then whisk together with 2 t corn starch until liquefied.

4. Combine with remaining ingredients and mix. You can vary the amount of cheese from 1 cup (which gives more "eggy" muffins) to 1.5 cups (which gives more cheesy muffins).

5. Use a 1/3 or 1/4 cup measuring cup to scoop out mixture and pour into silicone muffin cups. Fill them about 3/4 full or more if you prefer.

6. Arrange muffin cups on foil-lined cookie sheet and bake at 350 degrees for 20 to 22 minutes in a convection oven (a conventional oven might take a little longer). Allow them to cool for a few minutes and they will fall out of the cups with no effort.

After cooling, I wrap them individually in plastic wrap and refrigerate (up to a week) or freeze in a ziplock bag. They can be reheated in the microwave directly from the frozen state. I prefer to microwave them upside down until warm, then flip them over and continue microwaving until hot. In a 1200W microwave, from the refrigerated state, 15 seconds/flip/12 more seconds works great.
